Modern Tortilla is a combination of colors and flavors not being done in the Valley. Colors? Take a look at our logo and tortillas. Flavors? With Our Gluten-free Chipotle, Lime Cilantro and flour tortillas topped with proteins such as our hand carved El Pastor and Lime Scented Fish, Modern is setting the standard for Gourmet Tacos in the Valley.
Modern Tortilla is Chef Tom D'Ambrosio's (Co Creator of Aioli Gourmet Burger) second project here in the valley. With partner Kyle Hollenbeck and their partner Michael they grew Aioli Gourmet Burgers from one truck to three trucks and a catering company. Chef Tom is a Culinary Institute of America graduate of their Ace Program and has studied under Master Chef Richard Rosedale at the Greenbrier (A 5 diamond Resort) Apprenticeship. Chef Tom has taken his classical training and implemented his southwest roots into creating Modern Tortillas Menu.
Chef Tom's partners consist of Ryan Pfile, Tom's childhood friend, who has been in the restaurant industry his entire life. Ryan's family owned DiVito's pizza back in the day and he himself has been with Humble Pie for over seven years. Kyle Hollenbeck is Toms partner with Aioli Gourmet Burgers, Aioli Gourmet Catering and now Modern Tortilla. Kyle comes from a family that has been in the restaurant business since he was born. Kyle's background is in sales for companies like Yelp.com and LivingSocial.com which is what helped grow Aioli from one to three trucks.
