Any property owned by Steve Wynn will have a vegan menu. You probably need to ask for it, but there will absolutely be options and chefs who are willing to work with you on the Strip. There are other places on the Strip that are vegan-friendly, too (Slice of Vegas comes to mind, in Mandalay -- it's all right). Veganism has definitely been growing in popularity in Vegas. There's an Ice Pan at Harrah's where you can have them make custom ice cream for you, which is fun.
For off-Strip, my favorite Thai place is Komol Thai. Everyone raves about Lotus of Siam in the same shopping center, but seriously, Komol has an extensive vegan menu and is delicious and completely different from Araya's. Mint Indian Bistro has a lunch buffet (I miss it so) that marks everything vegan, vegetarian, and/or gluten-free. Nacho Daddy has some pretty tasty vegan nachos and other meals (but you should just get the nachos). My favorite place to go when I visit is Veggie House on Spring Mountain Rd. They do have egg, but I believe you have to specify if/when you want that. Otherwise, it should all be vegan.
There are newer places I haven't been since I left (I lived there for 12 years) like Violette's and VegeNation. Downtown kinda got revamped and has a lot to offer now. There's also a new trend of sushi burritos, so Jaburrito and SoHo SushiBurrito are some interesting options. LYFE Kitchen is a place my mom keeps talking about. It's not all veg, but there are some decent vegan options. There are two Go Raw Cafe locations, but I found them to be pretty pricey. Oh, and hey, you can get vegan donuts at Ronald's; they're not all vegan (they'll tell you which ones), but they're tasty and also quite different from Mighty-O (less cakey, more pastry, some jelly-filled).
