I'm going to Brighton in a couple of months for a show - can anyone recommend a nice hotel?

Staying in Brighton Hey Brightonites,
I'm coming to the end of a 4 year stay in London for uni, and I can't believe I still haven't been to Brighton. So my girlfriend and I are planning to go down there for a few days the minute we finish exams, she's been there a few times and says it's beautiful (only heard some good things about it actually).
So I was wondering if r/brighton could help me out, as in for recommendations of where to stay/where to eat/go out etc? We'd be coming down at the end of May so we're trying to plan sth really nice, like B&B and stuff, not too far from the city center.
Any comments welcome, of course, you'd really help us out!
