There is one secret gem, it's not very well known and is small, but is probably the closest to authentic sushi you can find in Israel, a place called Akiko. I would say this place is the closest that a Japanese can call home sushi (but still quite a disparity) so it will also cost you a bit of shekel if you are willing. But this is probably the best.
