  Depends on what you're looking for: We like The Buckhorn Inn (for a romantic weekend), The Bearskin Lodge in Gatlinburg (for a quick, one night stay close to the park-- free breakfast, small outside pool), Oak Haven Cabins in Sevierville (trips with the girls), and The Resort at Governor's Crossing (for a long weekend or a school break when we take all the children- lots of pools and suites). Or we stay in the park-- campground or backcountry ;)
