Does anyone know of an attorney who might be able to guide me through the process of establishing a nonprofit housing cooperative for people with disabilities?

That's a bit out of my league, I can help with the 990's and books and even setting up, but for the legal charters and bylaws, I would suggest an attorney. I have several contacts at Strasburger and Price, which is a very large law firm with attorneys that practice many different specialties. But they can be a bit pricey. FYI, it is probably going to be pretty costly to set up a non-profit, lowest end cost 2K. http://www.strasburger.com/
