  Greg Pearce, here's another pressing request for you: I grew up just outside of Chicago. Nowhere in the South have I found my favorite all time Chicago-style "dipped Italian hot beef" like they have at Portillo's. There are some important details about this gem that have to be followed: 1.The Chicago-style giardiniera aren't sauteed peppers. It's the stuff in oil (THIS brand is legit: http://www.ditalia.com/product/228/italian-antipasti-appetizer?utm_source=google&utm_medium=CSE&utm_campaign=google&gclid=CILUvLbZtb0CFY1 xOgodtEMA1 g). Offer both hot and mild. 2. The bread roll has to be chewy and dense enough to withstand the dip or double-dip without falling apart. 3. The beef can't be overcooked or dry. 4. The au jus can't be salty. 5. The whole sandwich gets dipped into the pot of au jus. It's not a "sprinkle". DIP IT LIKE YOU MEAN IT. It seriously looks like a mess of a sandwich, but I'm telling you, it's crazy good. Post here if you decide to give it a try.
