Looking for an "all you can eat" sushi restaurant, not a buffet. Any suggestions

I know you said no buffet, but you will not be disappointed at IchiUmi in Menlo Park Mall. Very fresh, huge assortment of rolls, sashimi and make your own hand roll ingredients, plus hot foods and hot pot. Expensive but well worth the price. Not your typical buffet selection of sushi. The website is for both the NYC location and Edison. http://ichiumi.com/
