A friend is visiting from Denmark and wants to eat lunch in Boulder... needs VEGAN options on the menu... suggestions?
Also, IF you know of any places in Estes that have vegan options, we'll go there over the weekend.
Any must-see/eats in Denver or Boulder? I'm staying in Lone Tree but have rental car. Might get a chance to do some exploring later tonight.

Another unique destination in Boulder is the Dushanbe Tea House. http://www.boulderteahouse.com/ Good food and tea (to date, still my favorite chai tea)
Looking for restaurant suggestions - visiting Colorado next week. My husband and I are visiting Colorado next week. We're spending two days in Boulder, two days in Vail, one in Colorado Springs and one in Denver. We tend to plan our trips around food, and have some things planned already, but we're looking for some suggestions for:
Boulder
Vail
Colorado Springs
We like contemporary American, Italian and Vietnamese mostly (but will try most everything), with an emphasis on places that are a bit more upscale without being *too* fancy.
Edit: Wow - thanks for all the excellent suggestions! Here's what I'm thinking so far:
Saturday: Frasca in Boulder Sunday: Aji in Boulder - great all-day happy hour and ceviche Monday: Sweet Basil in Vail Tuesday: Breakfast for dinner at Westside Cafe in Vail Wednesday: Uchenna Ethopian in Colorado Springs Thursday: Sushi Den in Denver
We'll see how close we stick to this... thanks again, everyone!

In Boulder, you should at least get a cup of tea (but they serve great food too) at the [Dushanbe Tea House](http://www.boulderteahouse.com/). It'll be one of the most extraordinary buildings you will ever get the chance to see, at least in North America. [Random chunk of their ceiling - so pretty!!](http://4.bp.blogspot.com/-hXMNNva8FGE/T_39ZjqKTII/AAAAAAAAB5U/0EZ5 juDDJvw/s1600/2012+Boulder+05.jpg)
