keep in mind that most of the veggie restaurants are open only for lunch and Monday to Friday. Verde Mesa being one of the few that opens for dinner (very expensive btw). Otherwise, you can order rice and beans at most creole restaurants, just make sure to ask if they make them with ham or other meats. Also many vegetable preparations are available such as mofongo or tostones made with plantain, yucca and breadfruit. happy trip to you!
