  For an Orthodox hookup, go to www.jeffseidel.com and click on "shabbat hospitality." If you prefer someone affiliated with the Conservative or Reform movements, I would contact their respective Jerusalem locations and ask to be set up with a host family.   I have personally done shabbat lunch meals in the city with Jeff Seidel's organisations and they are fun and laid back - the families. You just have to dress appropriately.
