I first started as a apprentice chef 4 years ago at Eling Forest Winery. Although my skills as a training chef developed I had a keen and creative side to want to create pastries and deserts so I was then moved from the kitchen to the Patisserie section where I learnt the craft of wedding cake sculpting to mass production of beautiful deserts and Profiterole towers and Croquembouche towers. I was then lucky enough to then go work in the award winning Quay Restaurant in Circular Quay and meet Peter Gilmore renowned for his award winning Menu. I was placed in the dessert section and taught how to create the famous snow egg, jewels, 3 type chocolate tart other wonderful creations. Over the years I have worked in various all type restaurants and cafes and found myself back to the dessert section. My dream is to one day open my own shop and business.
