As some of you may know, a new restaurant, Parker Garage (www.ParkerGarage.com) opened in the space formerly occupied by the Warhorse Inn in Parker. The proprietor, Brent Walker whom I have known for well over 10 years, strongly believes in buying local. For instance, he recently purchased a 1,200 lb steer from Kime Ranch which is about one mile from the restaurant. He tells me they use about 300 lbs of beef per week.
