  Best in CR is Chipotle. Maybe not always local, but organic and non GMO. http://www.chipotle.com/en-US/menu/ingredients/ingredients.aspx Otherwise you will have to go into Denver to a farm to table restaurant like Fruition (my favorite). http://fruitionrestaurant.com/
