Taunton Press publishes Fine Homebuilding, which I used to avoid because "fine" made me think it was only for 1%ers, but it's about doing it right regardless of high end or basic. They also publish a lot of books which I think are pretty reliably good.

Taunton press and greenbuildingadvisor for the more advanced stuff. Both of them seem to be willing to invest in the research to stay current with new methods and best practices. They will indicate what is code and what needs to be better than code. Most of the DIY books at the big box stores are decent for the fundimentals. 95% of what I've learned has been "on the job". Jump in with both feet. Sometimes that means I need to buy more plumbing parts (for example) since I need to do it twice to get it right. Still saved money in the long run. The only thing I don't mess with is electrical service mains or gas plumbing.

I personally always liked books more that videos or online, but that's just me. Magazines can be good too but don't always have the space for the depth of a book presentation. ....So to some degree it's gonna depend on you and what media you prefer/learn best from.
Second, you can read and watch until you're blue in the face, but you still don't *know* anything ...you just think you do.
Pick a SMALL project in an area you want to learn about e.g. sheetrocking. Get to a basic book (or whatever) on that, read up and give it a go.
After you've actually DONE something, coming to forums like this with specific problems can fast forward you along.... plus, the more you do the better idea you'll get of what it is more that you'd like to be able to do in a specific area. .... The importance of that being that your ideas of what's feasible to do for you will evolve and change as you learn and improve your skills.
