Recommendations for good locksmiths to change a mortise lock and jimmy-proof deadbolt? Current mortise lock is old and a larger hole might need to be cut. I'm worried...

You seem to have a lot of hangups about who you’re buying this from and the type of lock. The reality is, in my experience, that when someone breaks into your apartment they just kick the door down or break the frame with a crowbar. If the person installing the lock is your fear then you should learn how to re-key a lock, it’s not at all difficult. I’ve always been partial to schlage, medeco is also worth looking into if you’re paranoid about someone picking the lock.

I think what you meant by this was that you want to be careful about which cylinders you buy and from whom. Is that correct? If so, both Medeco and Mul-T-Lock have high security cylinders. The highest level from both companies are referred to by terms such as "factory restricted." That means that supposedly no one can copy your keys since locksmiths do not stock the blank nor can they order it. The keys can only be ordered from the factory and only by the person(s) whose signature is on file there.
While /u/convergecult15 is correct about people breaking down doors, there are things that can be done to reinforce doors and a good locksmith knows them. Ultimately, if the one entering has no concern about being seen or being heard making noise, virtually nothing short of a bank vault door is burglar-proof. That's why the Fire Department can get into anything.
But assuming burglars aren't using the [Jaws of Life,](https://www.jawsoflife.com/) you can take measures to make your home a less attractive target.
