Most restaurants do have options here. Newfound sushi has vegetable sushi and stir fries. Best coast and Harbour grounds have options. Brewed coffee shop have oatmeal cakes and vegan falafel wraps made fresh daily. Jungle Jim's has fajitas, quesadillas, and stir fries. There's stir fry at Aromas Plus. Shez West and Sorrentos are higher end restaurants but they have pasta and pizza options. There's also a lot of international foods, like vietnamese, chinese, Japanese, Thai, Indian, etc. Some offer tofu dishes or noodles, stir fries, rice, vegetable dishes. Pizza delight, Louis Gees, Greco, Z's Pizza - all have veggie pizza options. Crown and Moose has stir fry and vegan spaghetti (ask for no meatballs) and the chef is very accommodating. Jennifers has stir fries, subway has a veggie sub, tims has vegetable soup, bagels, etc. Mary browns has taters, fries and their gravy is vegan. A&W has a veggie burger.
