I do my own, using this method, which keeps the original hem/thread/wear marks. Some alterations charge a little more to do it this way rather than just folding them under--just ask them to shorten the jeans, keeping the original hem. http://www.craftsy.com/blog/2014/11/how-to-shorten-jeans/
