I've never used them, I can't vouch for them but I found [this site](https://www.disabledholidays.com/) from a quick Google.

To answer my own question, in the end I used an independent travel agent (independent, but affiliated to the Co-op) who listened to what we needed, and went out of his way to find us a holiday that seems to suit what we need. It's the first time I've used him, and we're not going until February, so hesitate to make a strong reccomendation, but he \*did\* listen and take on board my wife's needs. I contacted him initialy by email and then talked things through on the phone which was very helpful.
