Anyone who was lucky enough to have worked at thhe Front Street Cafe also willing to share the secret of their scambled egg puff? ....I know it involved steam.....

Steam Scrambled Omelots or Steam Scrambled Eggs, an art to perfect which we did from June 16,1997 to March 1,2004 (at 3:05 PM) when we sold the cafe. New owners we sold to thought it took too much time, effort and "art" so they dropped the most unique item(s) on our menu. People from all over said "That's the place that does the eggs!" Not only were the eggs "different" light & airy, no butter, no oil used at all, just 100% egg, steamed on our 3 head Hand Pulled Italian Espresso Machine (no dummy push buttons used, as we had to learn how to hand pull each shot of espresso, another art to learn & story to tell another day). Plus we served Our Award Winning Beer Bread (we won 7 out of 8 First Place Ribbons at San Juan County Fair.....the year we didn't win, is the only year we didn't enter !!). We got the Beer Bread recipe rights back to the Beer Bread Mix when Jim Petit & Barb left for east coast to retire and we have been supplying Kings & Marketplace ever since 2009 with the mix and I bake special Appetizer Size loaves when I am in the mood. The Mix is Now called "Big Mama Blues Beer Bread Mix" named after my wife's funny nickname from years ago. Big in attitude, not physical size. Those that know her, know what I mean, right Vivien, et al??? Now you know. Many have tried to duplicate the steamed eggs, made a mess,& gave up. Many have tried to duplicate our Beer Bread or buy another mix and keep saying "But Yours is different". My Mini Donuts also won 2 years at SJ County Fair as best taste, low fat, no cholesterol, so won an extra ribbon for that too. The Colonel's secret recipe, so to speak, and some fun island folk art & history.
Ok so my typical sources have dried up (summer businesses closed) I'm looking to buy a 40# box of boneless skinless chicken breasts. Need to restock the chicken in the...
