For me only Eku Inn. I tried various in Nuernberg but nothing comes even close to Eku. :) Better to give them a ring and try to book, else you might have to wait a bit for a table. http://www.eku-inn.de/

The Tasty Leaf in Nürnberg is a vegan restaurant which always has a few gluten free dishes labeled on the menu (check menu online as it changes every week, reservations essential). Also, Cafe Literaturhaus in Nürnberg has lots of gluten free items on the menu but lots contain meat. In any case, the staff there understands celiac and speaks English so I'm sure they could make gf vegetarian variants too on request.

We had a work dinner in Hutt’n. It’s traditional fränkische food (I don’t think there was Currywurst). It has a nice cozy atmosphere and apparently is always booked. Www.huettn-Nuremberg.de

We also went to heilige Geist Spital in Nürnberg. Also fränkische food slightly nicer and more varied menu I think. Bernd says for good Currywurst, you have to go to Berlin or north. This area isn’t really for Currywurst.

I was going to individually link a few places, but i've got all my favorites on a Vancouver Google map.
