If you are up for a VERY interesting read, I highly recommend Wheat Belly and Wheat Belly Total Health by Dr. William Davis. We have completely give up wheat. I feel so much better now. My unexplained back and joint pain has completely disappeared (except when I overdo it which is to be expected).

I don't have time to read all the comments, but the fried fish caught my attention. Someone might have mentioned baked salmon. Never had baked halibut, but probably delicious. Baked Salmon is awesome, or cedar plank salmon.

Absolutely, Margit! We listened to the audiobook borrowed from our library. I got so much out of it that we bought the books at Costco. His blog has some wonderful recipes you might check out. It is www.wheatbellyblog.com.

^^^ One of my fav is spaghetti squash recipes is cook a medium squash microwave but make sure it's a little underdone, scrape the squash out, add 3/4 cup mozzarella, a few Roma tomatoes (sliced), a bunch of fresh basil (torn) and salt and pepper, mix and put it in a 9 x9, add 1/4 cup mozzarella on top. Cook at 350 for 30 minutes. Spaghetti Squash Caprese Bake wink emoticon it's simple but really good

The Mediteranean Diet is low carb but allows wheat products and legumes. Go on the Mayo Hospital website and it has a pyramid of foods you can eat and explains it. I think it's a healthier and more well rounded diet than the Paleo diet.
