Can't help you with recommendations sorry, but if you are working with stone make sure you use lime mortar, never use cement with stone. Cement is too hard, and doesn't allow stone to breathe. And when a builder tells you it is fine to use cement, but with more sand, and a bit of hydrated lime, he is talking rubbish! Send him packing! Lime putty, or hydraulic lime is the only option when working with stone, otherwise you will compromise the structure of the stone and have a damp house Take a look at Ty-Mawr Lime Ltd.
