Eatrip does have good bagels. I like the recipe from Smitten Kitchen. Malt Powder is hard to come by around here, though. The boiling is a really big part of the success of bagel-making.

I was sad to read this: http://www.jweekly.com/article/full/18091/noah-s-bagels-to-eliminate-kosher-outlets-in-california/ Back in college, I knew this Jewish guy and he mentioned something about Noah's being kosher. Looks like sadly, that ended in 1996. Boo! No wonder their bagels don't taste as good anymore.

Even if they are kosher eating them for Christmas Eve is not! Cactus Eatrip has some awesome bagels here: http://okinawahai.com/cactus-eatrip/. No idea if they are Kosher or not, but if you had a big order I am sure he could help.
