How far do you want to drive. North Central florida has some great spots, the ichetucknee being one of them.

In regards to other ideas... if you're into mountain biking, there are some great trails in Big Tree Park, Soldiers Creek Park, and Spring Hammock Preserve... all of which are adjacent to each other. You can find the mtn biking trails off the main, paved trail... not hard to find. I also recommend wekiva: Wekiva Island Address: 1014 Miami Springs Drive, Longwood, FL 32779. There, you don't have to pay for the park fee and they have more kayaks for rental (faster service too). Seemingly endless miles of trails. Enjoy!
