Call Cesar at California Upholstery, 619-781-6779, it is right around the corner from UFO, you can absolutely bring your own fabric. He has done the couches for my business several times over the 5 years we have been open.

Call Jim's Upholstery and ask them. I don't think they do wheels but they might know who does. If you want to send it off somewhere, Coby Wheel does good work.
