Depends on where you are and what you are looking for.
**Kean coffee** has the best beans imo. The owner is Martin Dietrich, founder of the once great Dietrich's coffee, but started this chain after he got kinda screwed over by some business advisors. This guy is probably the most knowledgeable man about coffee in California.
**Portola coffee lab** is a must try. They have a variety of brewing techniques. A great atmosphere, and really high quality coffee. It's the first place I started drinking coffee with absolutely no additives (i.e. cream and sugar). But they also have one of the best mochas ever. The original location is great, but I like the one in costa mesa better.
I have recently discovered **Aosa coffee** in Huntington Beach. They have a cold brewed and nitrogen fed coffee that is also a must try.
More and more of these kinds of places are popping up all over the place these days. OC has really been ramping up its game if you know what to look for.

There's a great coffee shop next to the TJ's by the Laguna Hills mall, can't remember the name but nice, roomy and cute.

I like the Gypsy Den in Costa Mesa.There is also one in Santa Ana and in Anaheim. http://www.gypsyden.com/ It looks like what I imagine a coffee shop should be like, a place for conversation or reading. Not a corporate environment, more like a living room.

J.C. Beans in Dana Point is one of my favorites in Orange County. They have a HUGE used book library, the employees are incredibly friendly, and the place is super comfortable. They even have a large table in the center of the dining area where you can hang out with other people or play board games. The food isn't stellar, but their pumpkin pie is pretty tasty.

Euro Cafe next to South Coast Plaza. Has a a very European feel to it. They also usually play French and Jazz music rather than the usual pop standards.

Milk & Honey is nice if you like lattes. I like their Spanish latte and they have a lavender latte that my fiance and I like a lot. The place is kinda small, but they have a cool outdoor area too. It's on Bristol close to the Gypsy Den and Cafecito Organico, both of which I have yet to try.
