Taste in Morrisville, vermicelli with the beef short ribs and pork is the best thing I ever ate, my wife and daughter like the pho there. I noticed a sign this morning for Mekong in Durham by work, used to be a Chinese restaurant. Food on the website looks much better now, I'll have to try it this week. Pho Sure in Raleigh is very close to the house and decent.

Jamaican Jerkmasters on New Bern. Apparently they have 2 locations, but the New Bern one has seating.

If you’re open to Cary, I would definitely check out Szechuan Taste. The are amazing. I wouldn’t call them a hole in the wall, but they have good prices. If you go, definitely try the “Mamma’s fermented black bean chicken”.

Pho Vietnam. Original is off of Buck Jones Road in Cary but I believe they opened up another on Hillsborough in Raleigh.
