Villa Premiere Hotel And Spa is pretty nice. A lot of whistler peeps also like Grand Palladium as they have an adults only side. It is also out of the way so a nice long beach. The Riu is also worth checking out- they have several resorts at different price points.

Go on Expedia.com, they have good package deals. Stay in tulum if you want a true Mexican experience away from super touristy areas
