The Wading River is pretty awesome, and it has multiple campsite areas along its banks. The trip is pretty long from beginning to end, and the water at its deepest would be around 10 ft. from my experience. This particular river, and canoe rental company exemplifies the perfect weekend camping trip. http://www.mickscanoerental.com/
