Check their building license via Fair Trading - if they have a mark against their license or if it's been suspended it will show up there, also google review/facebook reviews...if reviews are turned off do a bit of digging around to find out why, Master builders are accredited which is good to know and do not cost any more to hirr than your average builder, get several quotes and make sure who ever you pick enters into a written contract with you so that if anything goes wrong you can claim on their insurance (home building insurance) lastly...any changes that are made when building commences have it put into writing.
