I can't help with the photograph thing unfortunately, but maybe with the hiking and dining. Hiking: definitely checkout Uetliberg. Walk up the hill, than along the "Planeten Weg"(planetary way) and then use the gondola at Felsenegg to get down again. If you're feeling lazy, you can even drive up Uetliberg by train. Dining: [Clouds](http://clouds.ch/) for an amazing view at the top of Prime Tower with ok food or [restaurant Alpenrose](http://www.restaurantalpenrose.ch/) for great authentic local high end cuisine, be sure to book in advance

Whever you end up meeting with your photographer you should be prepared for some rain! So maybe find something covered for the moment of the proposal/photos.
