  It's expensive but AllSet Learning (allsetlearning.com) is the shizniz. Your whole academic plan is overseen by John Pasden of ChinesePod fame, and the tutors are preposterously good. Uses ChinesePod lessons as well as customized texts and grammar points as materials, but it's super flexible and customizable as well.

If you know Chinese Pod, John has been a long time teacher for them. He's a 10+ plus China veteran and has a masters in Chinese linguistics from East China Normal U. He only takes serious learners and I think he delivers the best results out of any of those other mandarin schools. They customize everything so they'll gear it to exactly what your goals are. Gee, that almost sounds like an ad. But seriously, John and his team are the real deal. Have a look.
