Ok guys, I dropped the ball, I am planning on cooking pastrami on saturday, but don't have any pink curing salt, anyone know of a grocery chain that carries it? is there a substitute?

Anyone know where to find really big (diameter) sausages? Say about 2+inches?
When we were visiting my Mom-In-Law in MO, Arthur Bryant's (BBQ chain for those not in the know) had sausage sandwiches that were made outta big fat smoked sausages that were then sliced and put on a bun instead of just sticking a whole 1inch'ish diameter brat or the like on a bun.
Anyway, I can't find such a thing anywhere...

Only place that comes to mind is Malabar Super Spice in Burlington, but I'm not sure they sell retail quantities. Butcher-packer.Com sells it freeze dried and ships.
