  i don't know of any all vegan places, but i got some unique rolls in West Sac in a dumpy mall with 4 ETHNIC markets. Raku Sushi at 2916 West Capitol Ave. They own Nami in Davis, too, but the veg offerings were not as interesting. i think the miso was veg.
