  There are a couple of options for local dishes. Stortorvet Gjestgiveri is a traditional restaurant (http://www.stortorvets-gjestgiveri.no/en) that has some authentic dishes. Kaffi Stova is another option. That's where I take my friends who are visiting. About fresh ingredients, Fiskeriet on Youngstorget is a good option. Regular supermarkets have never disappointed me. You can see the date when the fish was fished on the packaging. Good luck!
