I think the community thing actually might be doable. You'd need a couple of paid, experienced staff - manager and cook, at least, to maintain consistency in quality and continuity, but I think you'd be able to manage with the rest of it. Oooooh, what if the place was used in a manner similar to FareStart [http://www.farestart.org/training/barista/overview/index.html]? That way, it'd qualify for non-profit status and serve the good of the community.
