Plant Restaurant on Merrimon Avenue is vegan. Also, must have the tofu scramble breakfast plate with vegan biscuits and gravy, kale, and sweet potato home fries at Green Sage Cafe! I second the Laughing Seed. Must eat there at least once.

I am jealous Stacy ;-). I love Asheville!! I second Rosetta's Kitchen!! They make the best Tempeh Reuben and Tempalo "wings" amongst lots of other choices including awesome desserts!! I also second Green Sage Cafe…they make their own "sausage" which is awesome!!! Laughing Seed is also yummy, but I prefer the "comfort foods" of the other 2 restaurants:-)!

http://www.booking.com/ can be your best friend for hotels. Lots of great deals, no fees and you pay the hotel directly when you arrive. I'd say forego the travel agent for Europe. Doing it yourself shouldn't be too tricky as there are lots of transportation options and fees tend to be higher for Europe.
