Welcome to Fort Collins friend. Finding good people to do any kind of skilled labor on contract is pretty hard. When repairing my fence I went through almost 30 different people. Half never called back, the other half were super booked, and the in between people looked like they just got off of a meth bender. Keep looking and you'll eventually find someone, but with the shortages of materials and all the new house construction most builders are not available.

This comment doesn't address OP's question directly but is more of a statement about home ownership in 2021.
Wife and I sold our mobile home and decided to rent. One of the primary reasons was exactly what you are describing. Sure, we don't own, but we also have no property ownership headaches and now live in a well managed community even when we were financially ready to take on home ownership (no more mobile home).
We even presented contractors with "Money is not an issue" and still no shows, no reply, etc. Lived here for over 10 years at the time and it has been getting progressively worse.
We had to take one contractor to court for putting down a deposit and then having months-long excuses for no work done then ducking our attempts to contact. We finally got our money back.
I have a friend who purchased new construction and is finding poor workmanship with many home warranty claims within months of owning.
Regarding race concern, which I know adds complexity for you: I am half Mexican but present as white, wife is white.
My parents, in North Carolina, are dealing with the same issue. I called many advertising contractors for work on their home and repeats of no show, no contact, and if they did get someone, less than ideal workmanship.
Maybe it is a generational thing? There's stories upon stories like mine for sure and it is not like how I remember when I was younger.

I had a nightmare of a time finding a landscaper to build me a concrete patio and I’m neither black nor a man. So many companies were cancelling on me day of for consultations. I finally went with someone and it took weeks for them to schedule to start and 2 weeks to do a 2 day job. It’s a nasty time all around. Apparently all the landscaping companies are having a rough time finding laborers and a lot of them aren’t willing to do small residential jobs right now because there’s more money in commercial projects.

I knew ahead of time from reading reviews that they weren't great with ongoing communication. So, I had to be more proactive. Our job was small, and we were happy it turned out the way we had envisioned. Good luck!

I work at a construction materials supplier, it’s a crazy time in the industry right now.
We have had price increases every single month so far this year on every single product we carry.
Combine that with so many people having problems finding labor (fucking pay people more), and it’s very tough to get smaller jobs done.
Make sure you get a contract that specifies that it includes any price increases on materials for the timespan of the job.
The permit process is also adding a lot of time, my carport permits took 5 months to go through and my materials cost rose 34%.
I have heard nothing but good things about Decks Of Distinction. I used Diligent Builders for my carport, Dan was incredible. They don’t usually build carports, but I caught him between jobs and he built us a beautiful big carport.
Good luck, FoCo is very liberal, but we are surrounded by conservative rednecks who might have racist animosity.

getting landscaping estimates- will likely use the guys that did the front for the builder, but any good recommendations out there NoCo peeps?

See yards you like and try to ask the homeowners who they used. Getting a landscape plan is very worth the cost. Dig down ( a tiny bit below grade) for your garden rather than raised beds. Retaining water is #1 in Colorado, rather than too much (back East for raised beds). Gary Kershaw/Fort Collins landscape is the only name I know
