Most Shoppers Drug Marts are apparently open today as well and they sell grocery items - "Shoppers Drug Mart Most Shoppers Drug Mart locations are open for Labour Day. The ones that offer grocery items can be very helpful in a pinch"

I don't think you can find seitan pre-made in Guelph, but you can buy packages of Vital Wheat Gluten from the Stone Store or 80% Gluten Flour from Bulk Barn (they're the same thing) and make it yourself at home
