We didn't take kids, but we LOVE the all-inclusive Dreams resorts. We stayed at the one in Tulum and they had amazing food (you can eat at restaurants as much as you like and not the buffet). They had a great Kids Camp...a fort style decorated building and tons of activities and security. We stayed on the resort the entire week. My sister stayed with us at the Dreams in Tulum and they have stayed in the Dreams in I Cancun and Dominican. Get an adjoining room or suite . We stayed at http://www.grandpalladiumrivieramaya.com/ For our honeymoon. No kids obviously but it was nice. You were limited to how many restaurants you could eat at depending on the length of you stay.
We have stayed at quite a few Riu's and they always have a million things for kids. All inclusive resort. http://www.riu.com/en/Paises/mexico/

I've spoke with Cruise Holidays of Kansas City. I ended up booking myself. They seemed good though. They do more than cruises. I would start with Expedia Vacations to get an idea for pricing and options. I always book our stuff through FunJet but I'm not sure they do New Zealand.
