Paoli is extremely cute but may be a little too small for what you're going for. If you ever need a small town afternoon it's definitely worth a visit.

Lake Mills has a great Bed and Breakfast, some beautiful parks for snowshoeing/cross country skiing and most importantly Tyranena Brewing Company. Plus a nice downtown with restaurants and shops.

Dubuque Iowa. Eagle point park is up on the Bluffs over the Mississippi River and Horseshoe Bluff has some beautiful trails down in an old Spanish quarry along the river. The downtown is very charming with a lovely river walk and no shortage of BnBs. The 4 th street elevator is the oldest/steepest elevator car west of the Mississippi and is also MUST experience as it slowly takes you up the side of the Bluffs to give you a view of the entire Downtown are and the Mississippi River. The Mississippi River Museum and Aquarium is also rich with history of the area and is a branch of the Smithsonian.

Stoughton has a great b&b outside of town and a very cool historic downtown with cool Norwegian bars and one of the best opera houses in the country (they have a lot of awesome concerts). They also have a state park on lake kegonsa that is beautiful as well.

Come check out Cottage Grove! We've got a quaint downtown with some great restaurants (I recommend 1855, cheese curds are to die for), all while close to both Monona and Sun Prairie, which offer their own great places to boot. I recommend checking out the Glacial Drumlin Trail, which starts here and goes all the way to Waukesha. Excellent if you're into hiking or biking.

Baraboo hits the spot. The downtown is super charming and the Ringling Bros B&B is really cute! The breakfast is communal (everyone eats together) and the owners cook it every morning. And it's right near Devils Lake

I went to https://honeybeeinn.com/ with my wife in Horicon and went on a Horicon Marsh boat tour. https://horiconmarsh.com/
The boat tour is more of a summer thing (note: you can't take food/drink on the boat). We saw a lot of wildlife on the boat and the bugs weren't bad once we got away from the dock.
Would also recommend https://www.victoriandreamsbnb.com/ in Lodi. It's been a few years but I think there was a nice diner within walking distance.
Or if you are really looking to get away from people http://www.asecretcottage.com/ is kind of in the middle of nowhere and has some chickens and a small lake to walk around/paddle boat on.
If you want somewhere closer Speckled Hen Inn https://speckledheninn.com/ is right on the edge of town on the east side of Madison. It has some farm animals and a few short walking trails.

Don't have a b&b recommendation but Boscobel is a pretty great town with the vibe you are looking for. Great cafes for breakfast and lunch, trails, Fun friendly bars for night.

Mineral Point is cute as heck. Check for events and they have a few very nice b and bs plus the Walker Hotel is very old and quaint.

Viroqua has great food, fly fishing Mecca, organic food producers, food producer incubator, really one of a kind town.

Candlewood Cabins might be a little more remote than what you’re looking for but very quiet, peaceful and relaxing!
