Shimano XT is the best. I recommend buying online at chainreactioncycles.com for 40%+ discounts and free shipping. You will need 2 brake sets and rotors. Brake sets come with brake pads. You may need adaptors (cheap) if you use 180 rotors. As far as bike shops, I love Hialeah Schwinn Cycle. Very reasonable prices and they know what they are doing.
