Hi Kate - I run "Cooking by the Canal" - we do one day French Classic cooking classes with a modern twist! You can join us at about 1000 for a tour of the farm at Domaine de Millepetit, which is nearer to Marseillette than Carcassonne, we cook and prepare a three course lunch and canapes to be enjoyed with matched local wines on our terrace on the banks of the Canal - hope you can join us sometime! Yes, there is a link with Languedoc! El Rinconcito restaurant in Nimes has a very nice painting on the restaurant wall showing the story of Victor. It's very moving.

I've stayed in the Hotel La Résidence which is plumb centre Lyon - it's comfortable but a bit faded fin de siècle - it's on a pedestrian priority street and there's no parking and no restaurant - but it's reasonably priced for the centre-ville.
