http://www.arbamoscow.ru This is not 100% vegetarian place but their meat-free options are yammi! My fav is falafel, it's rich and healthy. And 170 rub

Emily, try Loving Hut (Kitay Gorod). They have an extensive and delicious menu. There are also a ton of options in https://www.facebook.com/541064549371399 Darbars - Pokrovka that are vegan. Groot is an awesome restaurant that is also fully vegan. As for coffee, Starbucks gives you soy milk options (and not only).
Anna R. replied:
In Bakhetle (Бахетле) you can buy almond, soya and oat milk. If you will be around Arbat and want to have fast lunch, go to Obed/Bufet. It’s self service but good one coz it’s one of the Ginza projects. They have everything. Both of you will find something to eat. And there they do coffee with soya milk. https://www.tripadvisor.ru/Restaurant_Review-g298484-d8521123-Reviews-Obed_Bufet_Novy_Arbat-Moscow_Central_Russia.html?m=19904

Georgian is a good shout, Lobio or Pkhali are always good choices. To ask for the lent option you want to say ‘POSNEY’ although I’ve noticed they aren’t always strictly vegan. Fresh restaurant - there’s two locations Loving Hut Raw or Rawr - close to patriarchy ponds Any Indian restaurant is a good shout for Dal. As suggested above, most places sell but milks etc. Never less than 300 r per carton. Gorod Sad is a health shop lots of vegan options, there’s a few locations too. Enjoy

Georgian restaurants offer some wonderful vegan options like pkhali (recipe included so your friend will know what’s in there): https://www.google.com.tr/amp/s/georgianrecipes.net/2013/11/14/spinach-pkhali/amp/
