Artisanale is French country but Chef-owner Yasser Qahawish is excellent. Observations from a couple of years ago: http://www.waterlooregioneats.com/artisanale-guelph-smokin-harvest-table/

I guess really there is no where http://www.waterlot.com/ on the entire site that indicates what style of cooking they aim to be, I just didn't see a tonne descriptions of menu items that would lead me to believe it was saucy and frenchy..

Elixir Bistro in Cambridge serves French fusion food.

About Italian food I was goofin' on ya. Otherwise, other than what was mentioned, no locals. Confit appears beside chimichurri and we're better for it. A guy like Elvis E. cooks Caribbean but he was taught in the French way. Same with a guy like Jeff Ward or Nick Benninger ... but, as Derek said, Escoffier and true French is gone.
