Ted's Escondido Cafe in Lee Summit is amazing. You have multiple people waiting on you like royalty even refilling your complimentary cheese dip,sauce, and chips continuously. Have tried it twice and service has been the same ( even during lunch rush) enchiladas, chimi's, tacos, tender pork burritos, salsa,(hotter upon request) etc... everything has great flavor, is hot, and fresh. They put an emphasis on having you fill out an anonymous questionnaire rating your experience!

Drunken Worm (39 th St.) and Chelly's (Waldo) both are very good options that might not be on your radar. The fajitas for 2 at Chelly's are a great value. Drunken Worm has excellent street tacos.

Dos De Oros. The restaurant. The taqueria is great, but it's definitely not Tex Mex. Also, Tacqueria Mexico. I think the lack of good Tex Mex is a great testament to the good amount of great straight up "Mex" we have here. ;)

Try Luna Azteca if you haven't already. Their salsa is good and ask for their hot salsa if you like some heat. It's more a charred tomato salsa with habanero.
