Jake, I think you will like the area slightly north or south of San Juan del Sur in Nicaragua. Equally relaxing is the colonial town of Granada, onthe shores of Lake Nicaragua. It's got just the right amount of buzz - quiet when you want solitude, yet life if you crave human companionship. And Nicaragua is less expensive than other safe Central American countries. I know someone suggested the Bahia Belle but I've gone three times and had bad experiences every time. The first time, the boat was at capacity so we sat around for two hours waiting to get on and were never able to, so they refunded us. The second time, it was at capacity again so we waited for an hour and were able to get on (then paid for overpriced, watered down drinks). The third time, they turned around on their way to the Bahia Hotel due to fog but didn't tell anyone (we were sober enough to figure it out), and then they docked for the rest of the night back at the Catamaran. Most people were pretty drunk by that point and I think they had no idea we had turned back. All this to say if you can avoid the Bahia Belle, I would.
Could you do a private boat rental? [This company](https://seaforthboatrental.com) offers chartered boats (depending on how many people you have, it might be a viable option), which are actually more private than the one you initially booked. They also have actual boat rentals and it doesn't look like you need a boating license to drive it (would just recommend have a DD).

The Snail Museum. It actually has several great exhibits on natural history. It's across the street from the Cultural Museum. The Malecon is full of little restaurants and has a fresh fish market. The ship will also have a list of silver shops that offer discounts to people from the tour boats. You can bargain there as the prices are quite marked up.
