It's not specifically vegan or veg but The Works is a Canadian burger restaurant that offers veggie burgers or mushroom caps and many of the options are vegan or can be made vegan. I like "Grills gone wild" without feta,"Olive Oyl" without feta, "Man-O-War" without gouda, and so many others! smile emoticon

Old Spaghetti Factory on south waterfront has many options. If you're out on the west side, Nonna Emilia in Beaverton is authentic and great.
