I highly recommend a slow cooker AND America's Test Kitchen Slow Cooker Revolution cookbook. I love all of America's Test Kitchen cookbooks. Being an OCD Latina of a 3 year old and stay at home mom I recommend keeping things simple. One day focus on bathroom to clean, next day kitchen etc. Try to set aside 30 minutes at night to either prep for next two mornings (cut fruit/veggies and store in Tupperware). Clean and cut fruit and veggies and freeze ASAP for ready made smoothies. There is a rice cooker/veg steamer that you can use to do a simple easy dinner. Marinate meats in a Tupperware to have ready to grill yummy food at a moments notice and make two/three meals worth of protein (ie chicken for salads/stirfry/cubes for Emma). I like to get my work out early. If you are feeling creative play music and have Emma on maracas or a tambourine. Dance whenever possible. When she naps, you rest or relax (nap, yoga, Pilates, afternoon delight ). Rachel Ray has 30 minute recipes that will change your life. Good luck and your baby is soooooooooo adorable!!!
